The 5-minute end-of-night checklist for restaurants

Catch tomorrow's problems before you lock up — without adding an hour to your close.

You're exhausted. The last table finally left, your feet hurt, and all you want to do is lock the door and go home. So the end-of-night review gets skipped — or handed to whoever's least tired.

Then tomorrow at 11 a.m., a supplier doesn't show, you're out of a key ingredient, a staff member didn't know they were on the schedule, and a Google review from tonight is sitting unanswered. None of it had to happen. A focused five minutes before close would have caught all of it.

1. Walk the floor with fresh eyes

Before anyone leaves the dining room, do one slow lap — not to clean, but to notice. Look for:

  • Tables that weren't fully reset (a guest will sit there at noon tomorrow)
  • Lighting or music left on in sections that drain electricity overnight
  • Anything a customer left behind that needs to be logged

This takes 90 seconds and saves the morning crew from starting the day in cleanup mode instead of service mode.

2. Check tomorrow's reservations and staffing right now

Pull up tomorrow's bookings and your staff schedule side by side. You're looking for one thing: mismatches. A private party of 20 with only three servers on the floor. A full lunch rush with your head cook off. A booking made online today that nobody's seen yet.

Catching a staffing gap at 10 p.m. gives you 12 hours to fix it. Catching it at 10 a.m. gives you almost none. Send a quick WhatsApp message to the team member you need to call in — tonight, not tomorrow morning.

3. Do a two-minute inventory spot-check

You don't need to count everything. Pick the five items that would stop service if you ran out: your protein special, a key cocktail ingredient, the house sauce, coffee, and whatever your best-seller is this week. If any of them look low, fire off a message to your supplier or flag it for your opening manager right now.

The goal isn't a full inventory audit. It's a quick gut-check so you're not 86-ing your signature dish an hour into Saturday lunch because nobody looked.

4. Skim tonight's feedback before it goes cold

Check your Google, Yelp, or direct feedback channels for anything that came in during service. A one-star review posted at 9 p.m. that you respond to by 11 p.m. shows prospective diners you're paying attention. A response posted four days later shows them you aren't.

Also, ask your closing staff one question: Did anything go wrong tonight that I should know about? A comp'd meal, a complaint that wasn't escalated, a near-miss in the kitchen — these things disappear from memory fast. Write them down. Thirty seconds of documentation now saves a long conversation next week.

5. Set tomorrow's opening manager up to win

Leave a physical or digital note — a WhatsApp message works perfectly — for whoever opens. It should cover three things:

  1. One heads-up (the oven was running hot, the large-party reservation moved to the patio)
  2. One task (reorder the house red, call the linen service)
  3. One thing that went well (table 12 asked for the server by name, the new special sold out)

The heads-up prevents a surprise. The task means it actually gets done. The win keeps morale up. The whole message takes two minutes to write and makes the opening shift smoother before you've even woken up.

Running this checklist consistently is the hard part — not because it's complicated, but because close is when your energy is lowest and shortcuts feel justified. That's exactly where a Sidekyk helps. Message your AI assistant on WhatsApp at the end of service and it can run through the checklist with you, draft the supplier reorder, send the staff reminder, and post a response to that Google review — all while you're cashing out the till. Try Sidekyk at sidekyk.ai and turn your end-of-night five minutes into something that actually sticks.
