The problem usually isn't lazy staff — it's a checklist that's too long, too vague, or laminated to a wall nobody looks at. Here's a tighter version: five focused areas your front-of-house team can genuinely finish in five minutes, every close.
1. Reset the floor — don't just tidy it
There's a difference between "cleaning up" and resetting for tomorrow's first table. Make the standard explicit:
- All tables wiped, levelled, and set to the opening layout (chairs tucked, not dragged).
- Salt, pepper, and condiments refilled and grouped at the side station — not left half-empty on random tables.
- Menus wiped down and stacked in the right spot.
Assign one person to walk the floor before lights go up. A single lap takes under two minutes and catches 90% of the misses.
2. Close the bar like you mean it
A half-closed bar is the thing that will cost you the most tomorrow morning. The standard should be:
- Speed rails drained and wiped.
- All open bottles dated and stored upright or sealed.
- Ice well emptied and left to dry (ice sitting overnight = bacteria problem).
- POS closed out, cash drawer counted, and any voids noted on the sheet.
If your bartender knows the exact steps in the exact order, it takes about three minutes. If they're guessing, it takes fifteen — and something still gets missed.
3. Do a 60-second safety sweep

- All candles or tea lights out.

- Heating or A/C dialled back to overnight setting.

4. Communicate what happened during the shift
Your openers shouldn't be discovering problems — they should be reading about them. Keep a simple shift log: a notepad, a WhatsApp group message, whatever your team actually uses. The closer writes three things before they leave:
- Any 86'd items that weren't updated in the system.
- Equipment issues noticed during service (wobbly table, dodgy card reader, fridge making noise).
- Anything a manager needs to follow up — a customer complaint, a staff conflict, a supply that ran low.
This takes two minutes and it cuts your opening manager's stress in half. It also creates a paper trail that's genuinely useful when things escalate.
5. Sign off as a team — literally
This sounds soft but it works. Before the last person leaves, the closing lead does a 30-second verbal check-in:

- "Shift log written?" ✓
When a person has to say the word "yes" out loud to another human, they're far less likely to have skipped the step. It takes half a minute, builds accountability without drama, and means the closing lead can lock up with confidence.
